ABOUT SAM FROM BYRDI

Having began his career in the creative industries, Samuel first started bartending in the UK. After a stint as part of the award-winning team at Public in Sheffield, he moved overseas joining experimental fine diner Lûmé as Bar Manager in Melbourne. The foraging focused restaurant saw Samuel develop an extensive knowledge around endemic Australian produce leading to his appointment as Head Bartender at BYRDI. 

Working closely with internationally renowned operators Luke Whearty & Aki Nishikura, Samuel has played a pivotal role at the helm of one of Australia’s most progressive bars.

His work has seen him present international seminars on fermentation and more recently receive national recognition for the Australian Drink of the Year at the 2023 Boothby Awards.
